Mango Shrikhand/ Aamrakhand - Mango Yogurt Dessert

The mind is very volatile, isn't it? One thing, you feel that you are right and the very next moment, you think you are doing something wrong. The time I saw this quote, it suddenly hit my mind. Yes, the worse prison is your mind. You grow or deteriorate as per the borders you set for yourself in your mind. It becomes imperative that we always act positively, look at a lot of positive stuff, be around with positive people, always nurture positive thought so that your mind is healthy and the attitude you display is healthy. Otherwise definitely, your mind would become a prison, not worth to be in and around. I would definitely not say that I have a really positive mind, but I am always on the look out to develop my thought process and be positive so that I am able to look at things in a much brighter light. Whenever I feel a bit low, I turn towards Allah's word or towards the positive people I have in my life to give me the boost that I need. Alhamdulillah, I am blessed with the bounties of the Almighty in that case... :)

Today, I am sharing with you one of my favorite desserts, which is so easy. All it involves was assembling and mixing, noting more but the taste that follows it is too good. Even though it is not mango season, there is no dearth in getting mango pulp in this country, so making this dessert is a breeze. Whenever I have my yogurt staring towards its expiry date and I have stock of mango pulp, I always make this. I feel that it's one of the best desserts to have after dinner... super light and healthy... :)

Mango Shrikhand/ Aamrakhand
Serves 4


Ingredients:

1 cup mango pulp
2 cup thick yogurt (like greek yogurt)
A pinch of cardamom
Sugar, to taste (4-5 tbsp)

Method:

Combine all the ingredients in a bowl and whisk well till combined. Chill till use. Serve in bowls, garnished with nuts and devour!!!

Notes:

1. The yogurt should be really thick. If the yogurt is thin, strain double the quantity in a muslin cloth for 4-6 hours till the whey is separated and then mix in the remaining ingredients.
2. You may flavor the aamrakhand with saffron as well. Soak a few strands of saffron in a couple of tablespoons of warm milk till melted. Combine it in while mixing, it would give an awesome flavor and smell.
